This is a great sauce for short, thick pastas like rigatoni or rotini. If you like cheese and want to take it to a new level, just after you toss the sauce with your cooked pasta, when everything is still very hot, add burrata cheese or stracciatella cheese and mix well - it will add creaminess to your dish and a great mouth feel.
