My family's recipe for this classic Italian soup with lots of vegetables. If you want, you can add some water and then cook pasta in it for heartier meal. Sold frozen in quarts.
Potatoes, zucchini, carrots, celery, onions, peas, white beans, water, ground tomatoes, garlic, basil, olive oil, salt.
Thaw in refrigerator overnight, or in microwave, or on the stovetop adding a bit of water to avoid scorching. If you want to cook pasta with it, add quite a bit of water to the soup and bring it to a rolling boil before adding the pasta. You can also add a teaspoon of good quality basil pesto to the soup just before serving it to add an extra touch of goodness.
